Pork Chop & Sweet Potatoes


  • 2 Pork chops
  • 1/2 lb Gulf shrimp, peeled & deveined
  • 4 Sweet potatoes, seasonal varietals
  • Garlic

Rub salt & pepper into pork chops. Grill or sauté chops on medium heat, cooking to an internal temp of 145 degrees

Dice sweet potatoes into cubes and dice 2 garlic cloves. Combine on a roasting pan. Roast at 425 for 25-35 minutes, tossing halfway
